Half of Dubrovnik is offshore.
Kolocep and Lopud have no cars on them at all, and Sipan barely does. Boats leave the Old Port and Gruz all morning: a full day with lunch aboard, a speedboat run to the caves, or a kayak that never loses sight of the fortress.
Three countries are a day trip from Dubrovnik.
Mostar and the Kravice waterfalls make a long but easy day north; the Bay of Kotor is closer to Dubrovnik than Split is. Both cross out of Schengen, so everyone on the bus carries a passport and the crossing is part of the timetable — which is why the early departures are the ones that fit the whole itinerary in.

The Mali Ston Oysters
The bay at Mali Ston is shallow and brackish, fed by karst springs off the mainland, and oysters have been farmed in it since Roman times. They are eaten about a minute after they leave the water, standing on the boat that lifted them. The Peljesac Reds
The peninsula grows Plavac Mali on slopes steep enough that the pickers work them by hand, and the two crus everyone argues about — Dingac and Postup — face the sea from the south side.
